This apple crisp recipe with oats has a creamy vanilla bean filling and a buttery brown sugar oat topping that bakes up perfectly golden and crisp. It’s easy to make, cozy, and the ultimate fall dessert!
- 6-7 (800g) medium Granny Smith apples peeled and sliced thin
- 2-3 (200g) sweet apples such as Honeycrisp or Fuji, peeled and sliced thin
- ¾ cup light brown sugar, packed
- ¼ cup granulated white sugar
- 2 tbsp all-purpose flour
- ¾ cup heavy cream
- 1 large egg yolk
- 1½ tsp vanilla bean paste or extract
- 1½ tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp allspice
- ¼ tsp ground ginger
- ½ tsp fine sea salt
- 1½ tsp lemon juice
Crisp Topping
- 1 ⅓ cups all-purpose flour
- 1 cup rolled oats
- 1 cup light brown sugar, packed
- ½ tsp salt
- 1 ¼ tsp cinnamon
- ½ cup + 2 tbsp cold salted butter cubed
- 1 ½ tsp vanilla bean paste
- ¼ cup chopped pecans or walnuts optional
Apple Filling:
In a large bowl, whisk heavy cream, yolk, both sugars, flour, vanilla, spices, salt, and lemon juice until smooth. Add apples and toss to coat. Pour the apples and all of the luscious sauce into your baking dish.
Crisp Topping:
Combine flour, oats, brown sugar, salt, and cinnamon. Cut in cold butter until clumpy and coarse, then mix in vanilla bean paste and nuts if using. If you squeeze the mixture together it should come together to large clumps.
Squeeze the topping into small clumps, then scatter them generously over the apples, covering the surface completely.
Bake 50–55 min, until bubbling at the edges, golden brown on top and the apples are tender.
Cool 15 min before serving so the sauce thickens slightly but stays silky. Enjoy!
- Best apples to use: A mix of tart and sweet apples gives the best flavor balance. I love using Granny Smith for tartness and Honeycrisp, Fuji, or Gala for sweetness.
- Make Ahead: Prepare the filling and topping separately up to 1 day in advance. Store both in the fridge, then assemble right before baking for the crispiest topping.
- Reheat: Cool completely, then cover and refrigerate for up to 4 days. Reheat in a 350°F oven for 10–15 minutes to re-crisp the topping (or microwave for a softer version).
