These brown butter chocolate chip blondies are dense, gooey, and chewy with crisp golden edges, a slightly crackly top, and rich brown sugar flavor. They are easy to make, require no mixer, and bake up like thick chocolate chip cookie bars with the perfect balance of buttery blondie flavor and chocolate chips.

Ingredients

  • 3/4 cup salted butter
  • 1 cup packed light brown sugar
  • 1/3 cup granulated white sugar
  • 1 large egg room temperature
  • 1 large egg yolk room temperature
  • 1 tablespoon vanilla bean paste or vanilla extract
  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon baking powder
  • 3/4 cup semi-sweet chocolate chips or preferred chocolate
  • Flaky salt for topping, optional

Instructions

  • Preheat the oven to 350°F. Line an 8x8-inch metal baking pan with parchment paper, leaving some overhang on the sides.
  • First, brown the butter. To do so, add the butter to a saucepan over medium heat. Cook, stirring often, until the butter melts, foams, and turns brown with little brown bits at the bottom. Immediately pour the brown butter into a large mixing bowl and let it cool for 10 minutes.
  • Add the brown sugar and granulated sugar to the brown butter. Whisk for 1 to 2 minutes, until the mixture looks glossy and combined.
  • Add the egg, egg yolk, and vanilla. Whisk really well for 2 to 3 minutes, until the mixture looks smooth, thick, glossy, and slightly lighter in color. This helps create a crispier, shinier top.
  • Add the flour, kosher salt, and baking powder. Fold together with a spatula until just combined. Do not overmix.
  • Fold in the chocolate chips, saving a small handful for the top.
  • Spread the batter evenly into the prepared pan. The batter will be thick. Press the reserved chocolate chips on top. Top with flaky sea salt if using.
  • Bake for 24 to 28 minutes, or until the edges are golden and set and the center still looks slightly soft.
  • Let the blondies cool completely in the pan before slicing.

Notes

Customize these blondies by mixing in your favorite add-ins. Try chopped walnuts, pecans, white chocolate chips, toffee bits, mini M&M’s, butterscotch chips, or a swirl of caramel. Just keep the total amount of mix-ins around 3/4 to 1 cup so the blondies stay dense, gooey, and easy to slice.
