These Gooey Oreo Rice Krispie Treats are soft, chewy, and loaded with chunks of Oreo cookies in every bite. Made with just 5 simple ingredients, they're an easy no-bake dessert that's ready in just 20 minutes.
- 8 tablespoons salted butter
- 1 16-ounce/454 g bag mini marshmallows
- 2 cups mini marshmallows, reserved
- 1 teaspoon vanilla bean paste or pure vanilla extract
- ¼ teaspoon kosher salt
- 6½ cups Rice Krispies cereal
- 24 Oreo cookies roughly chopped
Line a 9×13-inch baking pan with parchment paper, leaving a slight overhang on two sides for easy removal. In a large Dutch oven or heavy-bottomed pot, melt the butter over low heat.
Add the entire bag of mini marshmallows and stir continuously until they are about 95% melted. Remove the pot from the heat while a few small marshmallow pieces remain, they will continue melting from the residual heat.
Stir in the vanilla and salt.
Add the Rice Krispies cereal and fold gently until evenly coated.
Then add about 3/4 of the chopped Oreos and the reserved 2 cups mini marshmallows. Mix just until combined. Avoid overmixing so the Oreos stay chunky and the marshmallows remain intact.
Transfer the mixture to the prepared pan.
Using lightly buttered hands or a buttered spatula, gently press the mixture into an even layer. Do not firmly pack the treats, or they'll become dense instead of soft and gooey.
Sprinkle the remaining chopped Oreos over the top and gently press them into the surface.
Allow the treats to cool at room temperature for about 45 minutes before slicing into squares. Enjoy!
- Store the Rice Krispies treats in an airtight container at room temperature for up to 4 days.
- For that fresh-made gooey texture, microwave an individual square for 5–8 seconds before serving.
