This homemade peach cobbler is loaded with juicy, spiced peaches and topped with a buttery, brown sugar crust that bakes up perfectly golden and crisp. It’s the ultimate from-scratch comfort dessert—easy to make and even better with a scoop of vanilla ice cream.

Ingredients

Peach Filling
  • 6-8 medium fresh peaches (950g) peeled and sliced. (If using canned or frozen read notes below. )
  • 1/2 cup light brown sugar
  • 2 tbsp granulated white sugar
  • 2 tsp cornstarch
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • Pinch of nutmeg
  • 1 tbsp vanilla extract
  • 1 tsp lemon juice
  • Pinch of salt
  • 2 tbsp salted butter
Batter:
  • 1/2 cup salted butter melted and slightly cooled
  • 1 cup all-purpose flour
  • 1/2 cup light brown sugar
  • 1/2 cup granulated white sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • 2/3 cup whole milk at room temperature
  • 1 tbsp vanilla extract
  • Turbinado Sugar + ground cinnamon for topping

Instructions

  • Preheat oven to 350°F (175°C). Grease or butter a 9x13-inch (23x33cm) pan.

Peach Filling

  • In a large saucepan, combine all the peach filling ingredients: peaches, brown sugar, granulated sugar, cinnamon, ginger, nutmeg, cornstarch, vanilla, lemon juice, salt, and 2 tbsp butter.
  • Cook over medium heat for 5–8 minutes until the juices reduce and become syrupy. Remove from heat and set aside.

Make the Batter

  • In a mixing bowl, whisk together flour, both sugars, baking powder, and salt.
  • Add milk, vanilla, and melted butter. Stir until just combined — batter should be thick but pourable.

Assemble the Cobbler

  • Pour the peach filling evenly into the prepared baking dish.
  • Spoon or pour batter evenly over the top, spreading gently. Leave some areas of filling peeking through — do not stir.
  • Sprinkle generously with turbinado sugar and then a sprinkle of cinnamon
  • Bake for 40–45 minutes, or until puffed, golden and bubbly. A toothpick should come out clcean.
  • Let sit for 10–15 minutes so the filling thickens. Serve warm with vanilla ice cream.

Notes

  • Peaches: Fresh peaches work best when in season. If using canned peaches, drain them well. If using frozen, thaw and drain before using to prevent excess liquid. Proceed with the recipe as normal. 
  • Make ahead: You can prep the peach filling a day in advance and store it in the fridge. Assemble and bake when ready to serve.
  • Serving suggestion: Best served warm with a scoop of vanilla ice cream or whipped cream. Leftovers can be stored in the fridge and reheated in the oven for a crisp top.
