This homemade vanilla sugar is made with just 2 ingredients and adds the perfect sweet, aromatic flavor to coffee, cookies, cakes, and more.

  • Slice each vanilla bean lengthwise and use the back of a knife to scrape out the seeds.
  • Add the vanilla seeds to a bowl with the sugar. Use your fingers to rub the seeds into the sugar, distributing them evenly.
  • Cut the scraped pods into small chunks and bury them in the sugar. They’ll continue to infuse over time.
  • Pour the mixture into an airtight jar. Label it, seal it, and let it infuse for at least 1 week before using.
  • Give the jar a shake every few days to help everything mix and intensify.

Notes

  • Vanilla beans: Grade B vanilla beans are best for making homemade vanilla sugar since they’re drier and more affordable, but Grade A beans work too.
  • Sugar options: Granulated sugar is most common, but you can also use raw sugar, caster sugar, or even coconut sugar for a twist.
  • Blending method: For instant use, pulse the sugar and chopped vanilla bean in a food processor until fine. Otherwise, let the sugar sit for 1–2 weeks for the flavor to fully infuse.
