This homemade vanilla sugar is made with just 2 ingredients and adds the perfect sweet, aromatic flavor to coffee, cookies, cakes, and more.
Slice each vanilla bean lengthwise and use the back of a knife to scrape out the seeds.
Add the vanilla seeds to a bowl with the sugar. Use your fingers to rub the seeds into the sugar, distributing them evenly.
Cut the scraped pods into small chunks and bury them in the sugar. They’ll continue to infuse over time.
Pour the mixture into an airtight jar. Label it, seal it, and let it infuse for at least 1 week before using.
Give the jar a shake every few days to help everything mix and intensify.

Vanilla beans: Grade B vanilla beans are best for making homemade vanilla sugar since they’re drier and more affordable, but Grade A beans work too.

Sugar options: Granulated sugar is most common, but you can also use raw sugar, caster sugar, or even coconut sugar for a twist.

Blending method: For instant use, pulse the sugar and chopped vanilla bean in a food processor until fine. Otherwise, let the sugar sit for 1–2 weeks for the flavor to fully infuse.
