- 1/2 cup salted butter melted and slightly cooled

- 1/2 cup light brown sugar
- 1/2 cup granulated white sugar
- 2 tsp baking powder
- ¼ tsp salt
- 2/3 cup whole milk at room temperature
- 1 tbsp vanilla extract
- Turbinado Sugar + ground cinnamon for topping

- In a large saucepan, combine all the peach filling ingredients: peaches, brown sugar, granulated sugar, cinnamon, ginger, nutmeg, cornstarch, vanilla, lemon juice, salt, and 2 tbsp butter.
- Cook over medium heat for 5–8 minutes until the juices reduce and become syrupy. Remove from heat and set aside.

- In a mixing bowl, whisk together flour, both sugars, baking powder, and salt.
- Add milk, vanilla, and melted butter. Stir until just combined — batter should be thick but pourable.

In stead of putting the butter in the batter and Peaches I put it in the baking dish and put it in the oven to preheat and then added the batter and peaches.
