It’s the kind of cozy dessert that smells like fall the moment it comes out of the oven.

Whether you bake them for a weekend treat, a Thanksgiving dessert board, or a holiday cookie exchange, these brownies deliver everything you love about Biscoff cookies wrapped up in rich chocolatey goodness.

What Are Biscoff Brownies?

Biscoff Brownies are fudgy chocolate brownies that feature Lotus Biscoff cookie butter swirled into the batter and often topped with crushed Biscoff cookies.

They combine the richness of chocolate with the spiced caramel flavor of speculoos cookies. Think of them as your classic brownie’s cozy, holiday-inspired cousin.

In this recipe, we elevate that flavor even more by using brown butter, which brings a toasty, nutty aroma that perfectly complements the cookie butter. It’s a simple upgrade that makes a world of difference.

P.S. This recipe is based on our viral Chocolate Brownie Recipe, so you already know it’s going to be delicious!

Why You’ll Love These Biscoff Brownies

There’s something dangerously addictive about these Biscoff Brownies. They combine everything you love about classic fudgy brownies with that buttery, spiced flavor of cookie butter. Every bite hits a little different, rich chocolate, nutty brown butter, and warm cinnamon-caramel notes all melting together.

Here’s why you’ll be baking them on repeat:

  • Unreal flavor depth: The browned butter brings a nutty, toffee-like richness that perfectly complements the spiced Biscoff cookie butter.
  • Fudgy, not cakey: This isn’t your average brownie. These have a dense, gooey texture with chewy edges and a glossy, crackly top.
  • Cookie butter swirl: Each square is marbled with ribbons of creamy Biscoff, so every bite has a hit of that irresistible flavor.
  • Crunchy cookie topping: A sprinkle of crushed Biscoff cookies adds texture and makes them look bakery-perfect.
  • Perfect for fall & holidays: The warm spice and caramel flavor make them the ultimate cozy dessert. It’s ideal for Thanksgiving, Christmas parties, or just curling up with a blanket and coffee.

They’re everything you could want in a dessert!

The Magic of Brown Butter in Brownies

If you’ve never browned butter before, get ready to unlock a new level of baking flavor.
When butter browns, the milk solids toast and caramelize, creating deep nutty notes similar to hazelnut or toffee. It’s a one-ingredient flavor enhancer that turns any dessert from good to unforgettable.

Here’s why browned butter makes these Biscoff Brownies incredible:

  • It adds richness without heaviness.
  • It enhances chocolate flavor naturally (no need for coffee overload).
  • It brings that toffee-meets-speculoos warmth that pairs perfectly with cookie butter.

Pro tip: Don’t walk away from the pan while browning butter — it goes from perfect to burnt in seconds!

Here’s what you’ll need to make a pan of Biscoff Brownies that’ll impress anyone who takes a bite:

Butter- The base of any good dessert! You’ll brown the butter to create that deep, nutty flavor.

Chocolate- A chopped dark or semi-sweet baking bar melts into the warm butter and forms a glossy base. Feel free to use dark, semi-sweet or bitter-sweet chocolate based on your desired sweetness level.

Cocoa Powder- Bloomed in the warm browned butter for a more intense chocolate flavor.

Sugars- A mix of granulated and light brown sugar keeps the brownies fudgy and flavorful while still giving you that crackly top.

Eggs- Four large eggs bind the batter and help create that rich, chewy texture.

Flour- Just enough to hold the biscoff brownies together, we want structure without cakiness.

Salt & Espresso Powder- Both enhance chocolate flavor and balance sweetness. The espresso powder doesn’t make them taste like coffee; it just intensifies the cocoa.

Biscoff Cookie Butter- The star of the show! Swirl it through the batter and drizzle extra on top for drama.

Biscoff Cookies- Crushed on top for crunch, texture, and that unmistakable Biscoff look.

How to Make Biscoff Brownies Step-by-Step

Let’s walk through it together. It’s super easy, but these details make all the difference.

1. Brown the Butter

In a medium saucepan, melt the butter over medium heat. Stir frequently until it foams and the milk solids at the bottom turn golden brown. The moment it smells nutty and caramel-like, remove from the heat.

2. Bloom the Cocoa & Melt the Chocolate

Add the chopped chocolate, cocoa powder, and espresso powder directly into the warm browned butter. Stir until smooth and glossy, the residual heat will melt everything perfectly.

3. Whisk Eggs and Sugars

Beat the eggs and sugar together in a large mixing bowl until pale and thick (about 5-7 minutes). This step is crucial in getting a crackly brownie top. Learn all about this in our How to Achieve a Crackly Brownie Top Guide.

4. Add Eggs & Vanilla

Add the vanilla and melted butter-chocolate mixture to the egg-sugar mixture. Stir until smooth and well combined.

5. Fold in Dry Ingredients

Mix together the flour and salt, then gently fold them into the wet ingredients using a spatula. Stop mixing as soon as you no longer see streaks of flour. Over-mixing = tough brownies. Add in chocolate chips.

6. Swirl in the Cookie Butter

Pour the batter into a parchment-lined 9×13-inch pan. Dollop spoonfuls of cookie butter over the top (microwave it for 10–15 seconds first if it’s thick), then use a butter knife to gently swirl it through the batter. Don’t overdo it — you want visible ribbons. Top with crushed cookies and chocolate chips.

8. Bake

Bake the biscoff brownies at 350°F (177°C) for about 30–35 minutes or until a toothpick comes out with a few moist crumbs. The brownie will contiue baking as it cools. Cool and enjoy!

Tips for Perfect Brownies Every Time

  1. Use room-temperature eggs. They mix better and give you a smoother batter. Learn all about the importance of room temperature ingredients here.
  2. Don’t skip the whisking step. That glossy top depends on emulsifying the sugar and eggs well. It takes some time, be patient.
  3. Warm your cookie butter. It’s easier to swirl and spreads more evenly to create biscoff brownies.
  4. Underbake slightly. Brownies continue cooking as they cool — pull them out when the center is still soft.
  5. Cool completely before slicing. The flavors settle and the texture becomes denser and fudgier.

How to Elevate these Biscoff Brownies

These Biscoff Brownies already scream cozy fall baking, but you can easily make them feel even more festive:

They’re perfect for cookie swaps, dessert tables, or edible gifts (if they make it out of your kitchen!).

How to Store and Freeze Biscoff Brownies

Storage:
Keep brownies in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week. The flavors deepen over time! If the brownies get hard simply microwave them to soften.

Freezing:
Slice and freeze individual squares in an airtight container with parchment between layers for up to 2 months. Thaw overnight in the fridge or pop in the microwave for 10 seconds before serving.

Frequently Asked Questions

Can I use another brand of cookie butter?
Yes! Trader Joe’s Speculoos or any creamy cookie butter works beautifully. Just make sure it’s smooth, not crunchy, unless thats your vibe!

Can I skip the browned butter?
Absolutely! If you are short on time, regular melted butter works perfectly fine. We do this in our viral Chocolate Brownie Recipe or our Slutty Brownies!

Can I make them gluten-free?
Yes, use a 1:1 gluten-free all-purpose flour blend. The texture stays similar since brownies are naturally low in flour.

Can I use box brownie mix to create biscoff brownies?
If you are short on time, yes, you can use box brownie mix. But, there is truly nothing better than a homemade brownie!

Why don’t my biscoff brownies have a shiny top?
Make sure you whisked the eggs and sugar mixture well, that glossy top comes from dissolving the sugar.

Fudgy and rich these Biscoff Brownies are made with nutty browned butter, swirled with creamy cookie butter, and topped with crushed Biscoff cookies for the ultimate cozy dessert.

Ingredients

  • 4 oz semi-sweet chocolate baking bar, chopped (use dark/bittersweet chocolate if you prefer less sweet brownies)
  • 1 cup + 1tbsp browned salted butter; see below (unsalted will work too)
  • 1 ½ cups granulated white sugar
  • 1/2 cup brown sugar
  • 4 eggs at room temperature
  • 1 tsp vanilla bean paste or extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 tsp salt
  • 1 tsp instant espresso powder
  • 3/4 cup cookie butter melted
  • ½ cup semi-sweet chocolate chips plus some for topping (use dark/bittersweet chocolate if you prefer less sweet brownies).
  • Biscoff Cookies for topping
  • Flaky Sea Salt for topping

Instructions

  • Preheat your oven to 350°F (175°C). Grease and line with parchment paper a 9×13-inch baking pan.
  • Add the butter to a medium saucepan. Cook over medium heat, stirring frequently, until it foams, turns golden brown, and smells nutty (5–7 minutes).
  • Remove from the heat and add the chopped chocolate, cocoa powder, and instant espresso powder. Stir until smooth and glossy, the residual heat from the browned butter will melt the chocolate completely. Set aside.
  • In a large mixing bowl, beat the eggs, brown sugar and white sugar until pale and thick, about 5-7 minutes.
  • Add the vanilla and the melted butter-chocolate mixture to the egg-sugar mixture, mixing until smooth.
  • Fold in the flour and salt until just combined. Add in the chocolate chips.
  • Pour the batter into the prepared baking pan. Drop spoonfuls of cookie butter all over top. Use a knife to gently swirl it through, don't overmix, you want visible ribbons. Top with chocolate chips , crushed Biscoff cookies and flaky sea salt.
  • Bake for 30-35 minutes, or until a toothpick comes out with moist crumbs. Allow to cool and enjoy!

Notes

  • Do not overbake: Brownies will continue to cook as they cool. To achieve that perfect fudgy center, remove them from the oven when a toothpick inserted in the center comes out with moist crumbs (not wet batter).
  • Quality chocolate matters: For the richest, most decadent brownies, use high-quality chocolate. I recommend Ghirardelli for the best flavor. If you prefer less-sweet brownies, use dark or bittersweet chocolate.
  • Adding instant espresso powder: This is optional, but a small amount of espresso powder enhances the chocolate flavor without adding any coffee taste.
  • For thicker brownies: If you prefer thicker brownies, bake them in a smaller pan (8×8 inch) and adjust the cooking time accordingly (add 5-10 minutes).
  • Storage: Store brownies in an airtight container at room temperature for up to 4 days, or refrigerate for a firmer texture. They also freeze well—wrap individual pieces in plastic wrap and store them in a freezer-safe bag for up to 3 months.

I’ve made these 3 times in the past 2 weeks!! My kids DEMAND them!! I try to cut back a little bit of the sugar, and they still taste amazing either way. We also like to mix up the chocolates by using dark and semi-sweet chips to add in. Every recipe i try from Justin is perfect!!

The brownie was okay. They never set up. I followed the directions completely, had to put back in the oven for an extra 12 minutes and they barely set up.

Thank goodness I made them before my party! Need to try another recipe.

I think skip adding all the chocolate chips to the batter and on top. This adds too much moisture to the brownie.

    Disappointed
