2. Melt the Butter and Marshmallows

Melt the butter in a large pot over low heat. Once melted, add the first portion of mini marshmallows. Stir constantly until the marshmallows are almost completely melted. Remove the pot from the heat while a few small pieces remain.

  • 1 16-ounce/454 g bag mini marshmallows
  • 2 cups mini marshmallows, reserved

Instructions

  • Line a 9×13-inch baking pan with parchment paper, leaving a slight overhang on two sides for easy removal.
  • In a large Dutch oven or heavy-bottomed pot, melt the butter over low heat.
  • Add the entire bag of mini marshmallows and stir continuously until they are about 95% melted. Remove the pot from the heat while a few small marshmallow pieces remain, they will continue melting from the residual heat.
  • Stir in the vanilla and salt.
  • Add the Rice Krispies cereal and fold gently until evenly coated.
  • Then add about 3/4 of the chopped Oreos and the reserved 2 cups mini marshmallows. Mix just until combined. Avoid overmixing so the Oreos stay chunky and the marshmallows remain intact.
  • Transfer the mixture to the prepared pan.
  • Using lightly buttered hands or a buttered spatula, gently press the mixture into an even layer. Do not firmly pack the treats, or they'll become dense instead of soft and gooey.
